Also, for those that added an electric fan, did you remove the existing motor fan when done?

I believe so - it is necessary to keep Webers/Dellortos clear of the body. It also helps tip the exhaust gases out…
I have Strombergs so mine is level.
If you mean the fan blade on the engine, I would suggest it is best to remove it - it will make it safer to adjust the ignition timing when it is running, and you may even notice the extra power available at high revs Someone will probably tell you how much power the engine-driven fan uses…

Your engine is mounted correctly. Elans with Webers or Dellortos have a special mount on the carburettor side to provide clearance to the footwell. I removed the water pump mounted fan from my +2 after upgrading the electric fan. I have had no water temperature problems since. It is good to remove any unnecessary mechanical loads from the water pump bearing to prolong its life. Make sure you have any air leakage paths around the water radiator blanked off with baffles or foam rubber. This will greatly improve cooling.
The fan is a square law device which means at low RPM it is pulling very little air (just when airflow is needed in traffic) and at high RPM it is pulling max air (and absorbing max power) when the car speed should provide sufficient airflow.
I removed mine as soon as I got the car.
